Sweet Rice

In a large pan melt:
1/4 c butter

Add:
4 cups cooked rice, cooled preferably overnight

Stir rice around and get it broken up and warmed through. Push all rice to the sides. To the center add:
5 eggs

scramble eggs and then mix into warmed rice around the edges. Spread mixture evenly in pan and add:
1 can coconut milk
1 T mollases
1 t vanilla
1/2 t cinnamon
1/2 t salt

Stir and then simmer until the milk is absorbed into the rice. Serve with fresh fruit and sprinkle with cinnamon and sugar.
