Happy Birthday Dear Cora
Cora is not so little anymore. She is growing up to be a responsible and dependable young lady. She recently purchased her own surfboard (the one on top of her head here) with money she earned babysitting! Cora is friendly and talkative and vivacious and energetic. She loves surfing and jumping on the trampoline and riding her bike and school.
Cora is strong and is not very humble about it. She likes to show off her muscles and to race and wrestle with her boy friends. She pretty much always wins. Sorry boys.
She also enjoys sweet treats and has asked for brownies instead of a birthday cake and she wants fried chicken for dinner tonight. But before dinner she wants to go surfing. Hopefully daddy can get off work an hour early so we can have a nice long evening of surfing and fun.
Recently I have been making white chocolate popcorn as after school and/or lunch time snacks. Cora tells me that she doesn't get much of her lunch popcorn though because all of her friends want to trade her for it. The other day she got some pineapple, a bag of crackers, and a few other goodies from a few friends who all wanted a little. She says everyone loves my popcorn and so naturally, yesterday, she asked me to bring popcorn treats to school for her birthday.
I'm surprising her by putting sprinkles in the mix and then tying them all up as lei's for the kids to wear home.

Here's the recipe:
White Chocolate Popcorn
1 bag Orville Redenbacher Movie Theatre butter popcorn
2 cups Kix cereal
2 squares Almond Bark, melted
Mix together the popped popcorn and the kix cereal in a large bowl. Pour the melted almond bark over the popcorn and fold into the popcorn mixture. Spread mixture out on wax paper to cool. Serve or keep in an airtight container. (Here in Hawaii we have to put our airtight container in the refrigerator to keep it from getting soft.)
