Papaya Chicken

I made this up last week and it turned out really good.  Forgot to take a picture this time but the kids liked it so we'll have it again.  I'll post a pic when we do.

Papaya Chicken
Preheat oven to 375 degrees
Place in a glass baking dish:
3 frozen chicken breasts

Season chicken generously with fresh ground sea salt and fresh ground pepper. Bake uncovered for 35-45 minutes (until chicken reaches 170 degrees internal temp). While Chicken is baking prepare papaya chutney.
In a medium fry pan over medium heat melt:
 2 T butter.

Add to the pan and cook until translucent:
1 small onion, diced

When onion is translucent add:
3 cloves of garlic, minced

stir and cook for a minute or two until the garlic is aromatic.  
Add to the onion/garlic mixture:
1/2 of a large half ripe papaya, peeled, seeded and cubed into 1/2 inch pieces
1/4 cup of raisins or chopped, dried plums
1/4 cup of water
3 T sugar

Cook for approximately 3 minutes to slightly soften papaya and reduce syrup.  Add and thoroughly combine:
1/8 tsp dried ginger (or 1 tablespoon fresh ginger, minced)
dash of cinnamon
dash of nutmeg
dash of allspice
2 dashes of fresh ground pepper
dash of fresh ground sea salt

Pour warm chutney over baked chicken fresh from the oven. Cover loosely with foil and let chicken rest for a few minutes before cutting and serving.

Serve with rice.
