Spam, Egg and Cheese Biscuits

As you know it is family tradition here in the Dooley home to have Breakfast for dinner every Sunday night.  This past Sunday Dave took charge and made us some delicious Spam, Egg and Cheese Biscuits.  They were delicious.


These delicious breakfast sandwiches are so simple to make.  You will need:


  • 1 batch of your favorite biscuit recipe with a yield of 12 biscuits.  We use the Better Homes and Garden Cook Book recipe or my Quick Mix Recipe.
  • 8 eggs scrambled with a bit of milk for fluffiness and salt and pepper for seasoning. Scramble in a bowl with the water and pour into a warmed and buttered skillet.  Allow eggs to set before stirring to ensure a nice fluffy consistency.  Stir once and then let finish setting so that you can cut the scrambled eggs into squares.
  • Cheese sliced thin.
  • 1 can spam sliced thin.  Place on a cookie sheet and place one slice of cheese over each spam slice.  Heat at 350 degrees until the cheese is melty.
Cut your warm biscuits in half.  Place a square of scrambled egg onto your biscuit. Flip your spam and cheese on top so the cheese can melt down onto the egg and top with the other half of biscuit.  Serve warm.

  1. Use water not milk for fluffy eggs

    Mix some cheese into the eggs to help them stick together and cook them omelet style to help them stick.
