This Granola is FANTASTIC!! My mom brought it along on the bike trip and it was all I had for breakfast, with a big scoop of plain yogurt, every morning. I will be making this for my family this weekend.
Preheat oven to 350 degrees. On a large jelly roll pan (cookie sheet with sides) combine:
2 cups quick cooking oatmeal
1 heaped cup mixed nuts
1/4 cup mixed seeds
3/4 cup unsweetened shredded coconut
1 teaspoon ground cinnamon
Over the mixture drizzle:
5 tablespoons maple syrup
3 tablespoons canola or olive oil
1 teaspoon vanilla
Stir to incorporate and coat all ingredients. Bake in 350 degree oven for 20-25 minutes, stirring every 5 minutes, until golden brown and aromatic.
Remove from the oven and stir in:
1 1/2 cups of mixed dried fruit
Cool completely. Store in an airtight container for up to 2 weeks. Serve with milk, yogurt, ice cream, etc. Serving size is 1/3 cup.
