Fresh Peach Pie

Dave's second favorite pie.
(I meant to have a picture but the pie was cut and eaten before I had a chance--it's that good!)

1 baked pie shell
1c. mashed peaches, peeled and sliced
1c. sugar
3 big T. cornstarch
1/2 cup water
approximately 5 cups peaches, peeled and sliced

In a medium saucepan combine cornstarch and sugar.  Add water and mashed peaches and bring to a boil stirring constantly.  Turn down to simmer and continue stirring while sauce thickens and clears.  Allow to cool for a few minutes.  Fill baked shell with peeled and sliced peaches.  Pour peach sauce over peaches and shake to evenly distribute sauce through to the bottom of the peaches.  Place in refrigerator and allow to set for 2-4 hours or overnight.  Enjoy plain or with a dollop of fresh whipped cream.

Yes, this recipe is very much like fresh Strawberry pie!
