Bike Trip Menu

As if I haven't been gone enough.

In a few weeks Dave and I will have the exciting opportunity to be the support vehicle for my brother's bicycle trip down the Oregon Coast.  We will take the RV and trailer the motorcycle.  I am in charge of food and camp set up.  Dave is in charge of support: emergency roadside assistance, medical care, snack patrol, etc.

With the help of my brother and his "bike gang" we have put together a very yummy, nutritious and biker friendly menu.  It is not a $60/week menu.  Here it is:

Breakfast Assortment
  • oatmeal
  • cheerios
  • eggs
  • mountain high yogurt
  • fruit: banans, berries, cherries, prunes, craisins
Lunch Assortment:
  • Wheat bread
  • sandwich meats & cheese
  • lettuce, tomato, condiments
  • Peanut Butter and Jelly and Honey
  • Tuna
  • Chips
  • fruit: see breakfast list
Monday--Whole wheat spaghetti with tomato meat sauce, french bread, large green salad
Tuesday--Honey Lime Chicken Breast, brown rice, green beans with almonds
Wednesday--Rib eye steaks, Mashed Sweet Potato, spinach salad
Thursday--Asian Salmon, brown rice pilaf, shredded cabbage salad
Friday--Veggie Stir Fry over white rice with tofu or other leftover meat

Drinks and snacks:
  • Cytomax
  • Chocolate soy milk, chocolate milk, chocolate carnation instant breakfast
  • Jake's Granola
  • Dried Fruits
  • Fresh Fruits(see breakfast)
  • Clif Bars!!!!!
