Watermelon Gazpacho

I don't remember where I got this recipe. It was interesting and a kinda fun way to use watermelon.

Combine and set aside:
1 cup cucumber, peeled, seeded and thinly sliced
1/4 t salt

Run through blender and sieve and place in serving bowl:
6 c seedless watermelon, cubed
1/2 c cranberry juice

Finely dice and stir into juice mixture:
1 red bell pepper
1/2 small red ionion
1 rib celery
1/4 c parsley
3 T lime juice
1 T cider vinegar

Rinse cucumbers and pat dry. Add to gazpacho just before serving and garnish with mint leaves.
