Spring Mix Apple Salad

20 oz Spring Mix bagged salad
2 Fuji apples, cored and sliced very thin
1/2 cup spiced nuts (recipe to follow), coarsely chopped
Honey buttermilk dressing (recipe to follow)

Toss ingredients in large salad bowl and serve.

Spiced Nuts
(recipe from Janine Harmon)
1 c sugar
1/2 t salt
1/2 c water
2 t cinnamon
1/2 t ground cloves
1/2 t nutmeg
2-3 c shelled walnuts or pecans.
Combine sugar, water, spices and salt in a pan. Bring to a boil covered for 1-2 minutes. Uncover, boil gently to 236 degrees (softball stage on candy thermometer). Remove from heat, add nuts and stir with a wooden sppon until mixture begins to look dull. Pour quickly onto wax paper. Cool slightly and separate. Store in tightly covered container or may be stored in freezer.

Honey buttermilk dressing:
1/2 c buttermilk
2 T honey
1 T cider vinegar
1 T olive oil
2 t mustard
1/2 t minced garlic
1/2 t salt
1/4 t black pepper
place all ingredients into a jar with tight lid. Shake well to combine.
