Dad makes dinner

What a beautiful Sunday we had yesterday. The sun was out. The temperature was up. The kids were outside lounging on the trampoline. Dave and I were lounging in the front room enjoying the breeze blowing through the open windows. It was a perfect end to a perfect spring break.

It inspired Dave to take over dinner duty. He wanted to try a recipe he'd seen on the Food Network earlier in the week but with a few tweeks. It turned out great. Thanks Dave!

Dave's Breakfast for Dinner
3 pieces of bacon cut into small pieces
1/3 onion, diced
2 garlice cloves, minced
1 loop Hillshire farms smoked sausage, sliced and quartered
4 small-medium sized potatoes, peeled sliced and chunked
2 sprigs fresh rosemary
10 eggs, whisked
salt and pepper to taste

Preheat oven to 350 degrees. In a family size cast iron skillet brown the bacon pieces over medium heat. Add the onion and garlic, cook down about 5 minutes (while slicing sausage). Add the smoked sausage, stir and place skillet into oven to heat sausage through, about 5 minutes (while peeling and chopping potatoes).

Remove meat and onion mixture from skillet reserving oil in skillet. Add additional olive oil if necessary. Add potato pieces and rosemary sprigs to skillet, season with salt and pepper and return to oven for 10-15 minutes until potatoes are tender.

Crack and scramble eggs in a medium sized bowl.

When potatoes are tender remove rosemary sprigs. Add meat mixture back to skillet and toss ingredients. Pour eggs over ingredients. Salt and pepper the top and return to oven for about 5 minutes until eggs are set. Season to taste and serve warm.


  1. He made a frittata!! I love those - they are easy and so yummy, and for some reason I like them better than omelets or scrambled eggs. I may have to show this post to Bryan to inspire him to take over dinner duty :)
