Remember my sister and I switch off months making a homemade pie for my dad. It is his birthday present every year for the past few years: Pie of the Month Club.
This month I made Brown Bag Apple Pie. This simple pie with pat-in-the-pan bottom crust + crumble top crust=no rolling out a pie crust! Love it!
Heather's Brown Bag Apple Pie
Combine 1 1/2 c. flour, 1 t salt, 1 t sugar, 1/2 c. oil, 2 T milk in a medium bowl. Transfer into a glass pie plate and press mixture evenly across the bottom and up the sides of the pan.
Peel, core and slice 6 apples into the crust.
In your medium bowl combine 1c. sugar, 1 t cinnamon, 1/2 t nutmeg, 2 T flour. Pour mixture over the fruit in the pan. Tap pan lightly on the counter to distribute sugar mixture through fruit.
In your medium bowl combine 1/3 c. sugar and 1/2 c. flour. With a pastry blender or fork cut in 1/3 c butter until well mixed. Sprinkle this crumbly mixture over the top of the fruit.
Place pie in a large brown grocery bag. Close bag by folding once. (SKIP THIS STEP IF YOU HAVE A GAS OVEN!)
Place pie in 350 degree oven and bake for 80-100 minutes. Remove pie from oven and allow to cool at least 30 minutes before slicing.
